Kept hearing about this quinoa stuff from gillian mckeith and finally decided to give it a try for the first time this evening. It was lovely!! As someone who has recently developed a wheat/rice intolerance, its an absolute godsend. i think you can buy it in supermarkets but just in case you can't get it, holland and barretts do it.
Anyway, heres my recipe. This is a soulstarr original recipe so if you try it, please let me know what ya think! As i was kinda playing this by ear, I didn't make any measurements so just use your judgement and the preffered amounts to taste.(the ingredients used are in bold)
- measure out your quinoa and then add twice the amount of water to a saucepan
- rince quinoa thoroughly as you would with rice and set aside
- add some chopped red onion, mushroom, chopped cashew nuts and a heaped teaspoon of vegetable bouillion to the water in the saucepan and bring it all to the boil.
- Once its boiling, add the rinsed quinoa and a handful of rasins or currants and turn down to a moderate heat.
- cook for around 15-20 at which point the quinoa grains open up and a little white root-like thing is revealed. all of the water should have been absorbed.
And you're done! It should have the same kind of texture as rice when cooked
I served it with miso glazed salmon fillets (and i forgot the damn sliced avocado with olive oil and lemon lol) but obviously theres a million different things you could serve it with. I was planning on mixing prawns in next time or maybe some grilled chicken peices. i probably would have added sweetcorn but hubby can't stand it some had to leave it out unfortunately 
Next time I make it, I'll work out measurements and post them up, that should make it a little easier to follow this recipe.
P:S- I think this is probably good for vegetarians as its predominantly protein.

| Sis, I've never heard of quinoa before. The recipe sounds good even better with the Avacado and lemon oooh got my belly diggin now!

here you go maat. give it a try sis, it's really yummy and i'm sure there are 101 ways of cooking it. I'm a bit obessed at the moment since I can only very little rice or wheat based things at the moment. I'm gonna try making it as a porridge tomorrow morning with honey and nutmeg. I'm guessing it will be a little bit like rice pudding... we'll see lol
