Have been trying to eat more veggies recently, was thinking about going all out and stopping with the meat but I might stick to fish or something not sure. Anyway, so far all I can do is steam stuff and theres only so much Broccoli and carrots I can eat (god spinage is foul), have taken to mixing them with rasins which is cool but does anyone have any advice on how to eat healthy from an African perspective?

Any veggie recipies that are quick and easy to put together?

So much easier to just roll into burger king and chow down a half pounder *stomach rumbles* thing is I don't eat any fruit or veg so from last year I've been looking to set the record straight and keep Ital. Felt weird shopping for veg last summer, offically one of those ''weirdos'' who checks the ingredients on everything .lol.

I've come a long way. :)

Any help?

ps...when u steam your veggies...there are many herbs/dry seasonings that you can sprinkle on them to give them some life...i usually use lemon pepper..or just pepper..and sea salt...sometimes garlic...a little butter or olive oil..

if you stir fry them, you can use onions..garlic...parsley...peppers...etc..jsut to name a few...you can even add some brown rice to this...or wheat pasta..

today i made some talapia fish...cooked in a pan with olive oil..onions..green peppers..different dry seasonings..green peas and brown rice (all in one pan)..with a baked sweet potatoe made with vanilla, all spice and butter on the side

easy....you just have to take the time to experiment with different things...

Not sure about stir frying, dosen't sound too healthy. Wanna keep it as fresh as possible. Feels like I'm in a science lab explosions and everything .lol. Kinda learning from my mistakes as I go along, can't put certain things in the microwave for example and you can boil an egg while you steam stuff. Was well chuffed at that one. :) 

Thanks for the links, was looking for more African focused stuff have heard that certain foods are bad for us but ok for other people so I've been weary of things especially after reading on Dr Afrika. These sites seems ok though.

i think you are thinking of deep frying...stir frying is just using some olive..or any other healthy oil..and just heating the veggies up a bit..they still keep their freshness in the process...
as far as afrikan focused and healthy...you may just have to experiment and leave the unhealthy things out of the recipe...
i use recipes sometimes but i always put my spin on them..."blacken" them up in a healthy way..
veggies are veggies ...it is how you cook them that makes them ethnic..

above are good sites i found...i am always looking for new ways to make things...

i also find myself making soups lately...herbs, veggies, and broth...easy and good...

veggie stews can be made healthy also...

i keep away from the white things like...flour, sugar, bread...i use whole grain products...which makes a world of difference..

oh...and i keep away from processed things also...anything in a box/jar or anything with ingredients that i can not pronounce or has too many syllables...lol..

That rule seems to apply in general .lol.

Can never understand the reasoning behind them ''refining'' sugar, making white flour and bread. They're not healthy at all funny how their insecurities even make it into their kitchens.

Thanks for the links again, might even get a few books. Or date a vegitarian....Might be easier that way.

My sister has been a vegetarian for about 15 years. When i have cooked for her in the past i have made her things like Cous Cous and Bulgar Wheat with stuffed red peppers and rice. Just cook your Cous Cous as directed and flavour it as you like. You could also serve up a jacket potato with lentils or the cous cous.

 One of my favourite veggie meals is red lentils. You can just cook your lentils in water on the stove and add your ingredients i use tomato puree, onion etc and then that is a meal done.

One of my favourite things is also tofu in black bean sauce with green peppers. Maybe you could give tofu a try?

 Stir frying is not fatty, you can get a oil spray in the supermarkets and that is very low virtually no fat at all in those.   

 Also, you could try cooking brown, black eye or red beans. Soak your beans overnight and then cook them on the stove soaking them will help you to reduce the cooking times. Let the beans soften for a while before you add your flavourings and then that is a meal there. You could serve it with rice, yam with omlette or Yam on its own.

 When cooking rice you could try to spruce up your rice at times to add flavour. Make your sauces for food interesting as well as to give the food some flavour.

 
You could try Macaroni cheese or cauliflower cheese with low fat cheese once in a while.

I tried those fake mince and i didn't like it but maybe you will. You can try the fake mince with pasta and make  Spaghetti bolognaise
