treat c:\ as the working drive:
install programs on it
this is where your windows installation is so leave only small items on it to keep your laptop fast. defrag it regularly.
use data: to store all your big files: itunes folder, films, music, pictures and backups.

I would take another look at that in FDISK.
The reason being is since it sounds as though you have one big pie split in two pieces; a primary and an extended, with no logical partitions. For a laptop that has only one storage device that's kind of icky.
You see, if the operating system has to 'look' into an extended partition for data it's going to cause that entire drive to do much more work than it would ordinarily. This particularly in case you don't happen to be working with a heck of a lot of RAM, and are using high-end programs, that drive is going to do a lot of thrashing.
My suggestion here is if you keep the drive partitioned as it is, you should only install the bare minimum of operating system components. Don't install 'extra' applications into that extended partition-tha label DATA means exactly that. Store files in that partition, not programs, that will have to be registered back into the root partition and which Windows will need cross over in order to answer every system call when the program in question, is launched or executes some system call (command).
