You may never get the evidence you are looking for, so you may spend a number of months/years doing this (snooping) and never be any the wiser. 

Would it be worth it? 

Got to be easier to just leave him/her and have your peace of mind.  Basically, if the person (through their actions) makes you feel that this stuff is necessary - maybe you shouldn't be with that person. 

Living in a state of jealousy/suspicion/distrust must be horrible, not just for the person snooping but also for the other person.

The mind can play tricks from time to time, sometimes you see things that are not really there, paranoia from past relationships gone bad for example.

You snoop, you don't find anything, he/she is trustworthy, it was all in your head, your mind is rested.

You snoop, you catch them, you dump them, mind is rested

With the phone thing, just ask them for the pin, if they give it to you without a second thought then your probably reading too much into things, if they stutter, get worried.
